Doesn't everyone just love bok choy!? Personally, I think that it should always be written with an exclamation mark, because that's just how I roll. It's just so delicious
I got 2 heads of baby bok choy! yesterday at Planet Organic. Bok Choy is a calcium-rich leafy green, and after listening to Erik Marcus' interview with Jack Norris, I've been on a bit of a calcium spree.
ANYWAYS, I made an amazing, EASY lunch today with one of the baby bok choy!- so I'll share the recipe with you.
(sorry, no pictures- my camera's broken at the moment)
Garlicky Baby Bok Choy! (for one)
1 head of baby bok choy!, cut into pieces a bit larger than bite-size
1 green onion, chopped
Just less than 1/4 cup water
A teensy bit of oil (like 1/4 tsp) (I don't like using much oil when I cook)
1 tsp of tamari or soy sauce (low sodium, preferably!)
1 clove of garlic, finely chopped****see note****
Heat the oil (if using at all) in a frying pan on medium heat, then add the garlic, green onion, and bok choy!. Pour the water over it all, then drizzle on the tamari or soy sauce. Stir it all up, then let the bok choy! wilt and tenderize. Enjoy!
***Note****
When I made this today, I used a cube of frozen garlic. It has a nice flavour that is still garlicky but more mellow, almost like butter (but vegan of course!)
I was planning on using broccoli too, for a real So-Cal stir fry. "Cal" as in calcium, of course. And that's enough bad jokes for today. In any case, I'm sure that a bit of experimentation would result in the discovery of plenty other vegetables that would be just EXCELLENT with the bok choy!
