Mung Bean Salad- OH BOY THAT WAS GOOD

This weekend was my brother's 13th birthday. Saturday was his party, and at 6:00 I was hungry but the kitchen was invaded with gross on-the-verge-of-puberty grade-7 boys. Ewie. And they were eating some cheesy pizza (OT VEGAN). Ewie again.

So, I had to fix myself something quick to eat and get out of the way. And this yummy dinner happened to be a MUNG BEAN SALAD! Woohoo!

Needless to say, it was SOOOO good. Feel free to modify the ingredients & amounts to your own tastes.

Mung Bean Salad
serves one ;)

1/3 cup cooked green mung beans
5 halved cherry tomatoes
1/4 cup broccoli florets
1tsp flaxseed oil- gotta get those Omega-3 fatty acids!
1/4 tsp tamari sauce (soy sauce will work too)
1/2 to 1 tsp lime juice (to taste)
Dash of cumin

Combine in a bowl.
Garnish with several leaves of Belgian endive, if desired. I put some like a fan around the inside of the bowl, but those were the first to be devoured. :P
