Gluten-free 'Pancake cookies'


I've got some new neighbors who are vegetarian (yay!) so I decided to bake some cookies for the family. However, their daughter is celiac, so that means NO GLUTEN! No wheat!

I have no experience with gluten-free baking, but I decided to give this recipe from Bob's Red Mill a shot.

I bought the 'Wheat-free Biscuit and Pancake Mix' a few days ago, which is probably a bit different than the Pancake mix called for, but worked anyways. Different ingredients, I think (mine has rice and garbonzo, the other has potato and tapioca), but it's all good.

Recipe Review: Gluten-free Pancake Cookies

I wasn't really sure what to expect with these, as I've never used a gluten-free mix in my baking. Would these be anything like the chocolate chip cookie I already know, from Vive le Vegan?

Well, the dough was really gloppy so it was tough to put the cookies on the sheet. I managed, though.

I didn't know how much these would grow/spread, but it seems that I didn't give the cookies enough room :

Mmm, you'd never guess that there are CHICKPEAS all ground up in there!

The verdict? The recipe was easy and simple, and received rave reviews. I didn't ask my mom or sisters how they compared to Dreena's cookies, but they all realllly liked these 'pancake' cookies.

We brought a plate over next door before dinner, and it's only 6:43 so I don't know how the neighbours liked them. Let's hope they sank into a blissful paradise of chocolate chip cookieness, because then they'll be impressed with the wonders of vegan baking!

I think your cookies are wonderful looking and made with love! Those are the best kind. I have 3 friends who are not able to have wheat so this is a great recipe I will use for them. YUM! Any word on how your neighbors liked your gift?

Aw, thanks! Definitely use this recipe for them, and try some of the variations too! (like dried fruit instead of chocolate chips)

What a wonderful gesture to new neighbours. So thoughtful! I can't imagine having to eat wheat free. I would surely die! Well, probably not, but it would be very difficult. Let us know how the neighbours liked your cookies.
