Lemon poppyseed cookies!

The other day, I made some yummy lemon poppyseed cookies from Eat, Drink, & Be Vegan. I can't remember their exact name, sorry!

Unfortunately, I inadvertently added a bit too much liquid, so the cookies turned out very thin...
But they're still delicious! :D Hopefully next time I'll get them spot-on.

In other news, I'm going to the Edmonton Folk Music Festival tonight. Fun fun fun! I'll be real busy for the next few days... then after that I'm off to SAN FRANCISCO. Dang, am I ever excited!

I've had cookies turn out very thin when it's humid outside. They still taste the same.

The humidity could have been it then! It's been real warm and muggy lately. :S

They are soooo good! I love anything lemony in general but these tasted amazing.

When I made these, they turned out thin too! I think I will decrease the liquid next time...they are very scrumptious though!

oh i must make these cookies soon! i've had an insatiable craving for all things lemmon poppyseed for like the past 3 years. lol

Yeah, these didn't turn out as expected but still tasted fantastic, so I still highly recommend this recipe! Lemon poppyseed is one of those absolutely perfect combinations, like tomatoes and basil or apple and cinnamon. :)
