Mixed grain porridge! So yummy.

Yesterday, I said that I would make a porridge mix with TEFF, and here it is! The lovely colour comes from the TEFF as well as the 1/3 cup or so of cinnamon... A bit too much, even for me! Still yummy, though. Enough rambling- here's the recipe:

Mixed Grain Porridge
makes enough to store in a jar

Grains you''ll use... feel free to substitute or fool around with the quantities to fit your own preferences!
1/2 cup quinoa
1/2 cup whole teff
1/2 cup amaranth
1/4 cup rolled oats
1 tbsp coarse buckwheat
1 tbsp barley

Cinnamon, optional. Or other yummy spices.
Another 1/3 cup rolled oats, optional.
Wheat bran, optional, if you don't already get enough fiber in that healthy vegan diet of yours

In a coffee or spice grinder, grind up the grains about 1/4 cup at a time, depending on the size of your coffee grinder. Make sure that you've ground them up enough! Otherwise, it'll be really annoying to crunch on a whole, uncooked grain of quinoa when you're eating breakfast. I like them to be almost a 'flour', but not quite.
As you've ground up each grain, put it into a good-sized jar.

Once you're done with the noisy stuff, twist the lid back onto the jar and SHAKE to combine. Add optional cinnamon (about 2-3 tbsp would be nice), shake again, and voila! You can also add unground rolled oats for more texture.

Now, to cook this porridge, take some porridge mix, pour on some nondairy milk, stir a bit*, pop in the microwave for 2-3 minutes (depends on your micro-ondes), and that's it! Top with ground flaxseed for a healthy breakfast.

*That stirring part is important- when I forget to do that, I end up with all these dry, uncooked spots. Ewie.

Here's part of what I had for lunch today:
A nice, BIG salad with tomatoes, mung beans, carrots, bell pepper, black beans, broccoli, cabbage, basil, the juice of one lime, the "Liquid Gold" salad dressing from Becoming Vegan, some sunflower seeds, a bit some almond butter mixed in for good measure, and topped with a healthy amount of dulse. :)

This morning, I showed my dad the bottle of agave nectar and let him try a bit. He really liked it! In fact, he liked it so much, that I came back and found almost half the bottle gone...
And yeah, that's honey there in our pantry. :( Yeah. so living with omnis isn't the best, but I'm surviving.

I've soaked the lentils and now it's time to wait, rinse, and wait and rinse some more...
I really hate using a jar for sprouting. I've had great success in the past, but I'm definitely going to buy a real-deal sprouter sometime...

Good idea for the porridge. I love cinnimon too! Wow, that salad sounds delicious! When I make a salad it's tasty but really boring, with the same old vegetables.

Everything here looks so great! Lentil washing is so mundane to me... i wish i could get past that part of bean. The washing, rinsing, waiting... *sigh*

If the worst thing in that pantry is honey, you're doin' better than OK.

i need to check into teff some more...

Don't worry, my salads get kinda boring too, when you have almost the same thing day after day... :)

Kleopatra- it's really not as boring as I'd thought! I've found that most sprouts are fairly flexible- you don't have to rinse exactly every 2.342 hours or whatever. And it's rewarding! :)

If you can't find teff in your local health food store, you can order some from Bob's Red Mill at http://www.bobsredmill.com/catalog/
