Yummmmmmy quinoa porridge

Mmmmmm.... Trust me, this is delicious.

Quinoa is a highly nutritious grain, that's for sure. It is packed with protein, fiber, iron, calcium, and lots of other wonderful things. I've been wanting to eat more quinoa, but I prefer to eat my grains earlier in the day (lots of oatmeal for breakfast as opposed to a big plate of pasta at dinner). I've considered whipping up a pot of quinoa in the morning, but really, I'm much too hungry then to wait 15 minutes for the grains to cook.

We bough quinoa flakes once too, but I looked at the package and it seemed that lots of the fiber had been removed through the processing. Argh!

MY SOLUTION TO THIS DILEMMA?

Microwave Quinoa Porridge

1/2 cup of quinoa (uncooked)
1/2 tsp of cinnamon, or much more if you're a cinnamon junkie like me!
About 1/2 cup of soymilk/other non-dairy milk/water if you're boring

Grind up quinoa in a coffee grinder. A moderately coarse to fine meal is great, or go crazy until it's quinoa flour... it's all personal preference. Pour your quinoa meal into a microwave-safe bowl.

Stir in cinnamon, then pour in desired quantity of liquid. How do you like your porridge- watery or so thick you can flip the bowl upside-down and it sticks?

Stir a couple of times more, then pop in the microwave. I usually cook this for about 2 minutes, but it depends on your microwave, the coarseness of your quinoa, and whether you have to be careful because your bowl is shallow and you DON'T want the porridge to overflow and get all over.

And that's it- enjoy your delicious breakfast!

Variations

-After cooking, stir in some ground flaxseed, fresh berries or cut-up fruit, and/or blackstrap molasses
-Make your own porridge mix: Grind up quinoa, amaranth, rolled oats, or other grains of your choice, mix in some cinnamon and more rolled oats, then store in a handy jar.

My youngest sister asked that we make tofu nuggets/turkey necks again last night! We used my own curry powder blend this time (I've got a list of the spices I use in this post). These were even better today!

Tofu nuggets and grilled eggplant "fries"... I also had some steamed carrots, too.

I get kinda creeped out by these... The inside is scarily flesh-like :S


I also wanted to mention something about the tofu in the nuggets. When I buy firm tofu, I might use a bit fresh, but the rest is drained right away, cut into cubes or nice small chunks, then frozen. When I thaw out the tofu to use, in these nuggets, for example, I microwave them for about a minute and then drain out the excess water again.

What a great idea to eat quinoa like oatmeal. I never thought of grinding the quinoa to make it cook faster. Real creative.
