Injera!!!!

This day started off on the wrong foot... When I was having breakfast this morning, all of a sudden my face started to feel very 'hot' and sunburnt, then my hands & feet & knees started to feel like that too, but also tingly. Very weird! My parents thought that it might be an allergic reaction to the spoonfuil of almond butter I had, but that's weird because I have that every day. Hmm.

Anyways, the injera batter looked ready so I decided to try to make some to take for our trip.^Before fermentation...



^And after! It smells weird and got bubbly.


Here's a picture of the very first one in the frying pan:

Unfortunately, it didn't work out so well... The injera didn't get any of its characteristic bubbles- instead, it got all crackly and fell apart. Was that because I didn't ferment it enough? Probably.

Undeterred, I tried again:

Argh! More cracks!

I did end up eating some, though. I cooked the little bits and the mini-injera were very yummy. A nice sour tang was quite unexpected, but pleasant.

Maybe my heat was too high? I won't know until next week, since we have to leave right away and I haven't packed yet. The injera batter is in the fridge waiting for me :)

Hey!!! How are you now!? That sounds very scary, what you went through... wonder what it is/was?!!? Batter up?! :o) Looks good, even it smells weird...

David-thanks! And I wish I could have stayed for a month, but I was away for just a few days.

Bazu- Yeah! It's time for an injera revolution! And if the demand for teff increases, it should eventually be easier to find, too!

Veg-a-nut: Aw, thanks, I do feel better indeed. I'll have to lay off the almonds for awhile just in case, though. :(

Kleo- I'm feeling great, thanks! :D I should maybe see a doctor sometime about it, maybe get an allergy test...
Heh, you just gotta love that sour, tangy smell of fermenting dough.
