Big thanks to my mom!

As mentioned in a previous post, school has started again and I'm as busy as ever. I've been juuuust scraping together a lunch for the next day. Thankfully, my mom has been preparing delicious dinners for me (and the rest of the family) that are flavourful, vegan, and just plain yummy! I'm so proud of my mom- I did have to show her where some of the spices are hiding in the pantry, but so far her results have been great.

We had a delicious Creamy Cabbage and Zucchini Curry yesterday and the day before (lots of delicious leftovers). MY dad and MY brother even liked this. WHOA!




Then, tonight we had the Earthy Lentil Stew from Vive le Vegan! It was really yummy- a lot like the lentil soup we usually have, but with a bit more depth in flavour. My dad & brother loved this too!

When I eat lentil soup, I like to add some interest to it by adding some toppings- always fresh raw veggies, cut into tiny pieces. Plus, the raw vegetables contribute a boost of vitamin C, making the iron from the lentils even MORE bioavailable.

I used cabbage, yellow bell pepper, garden carrots, and tomato today:
Spinach, lemon juice, and broccoli are some add-ins I like as well.

:) Sometimes I add too many veggies and my soup is suddenly a salad!



Lastly... on my run today, I saw a lovely rainbow (it was a fantastic run, by the way. Edmonton has perfect weather in the fall for that kind of thing). It kinda snuck up on me, too- I turned a corner past some trees, and BAM! :) So, once I got back home I grabbed my camera to take a piccie.

We saw a rainbow today too! :)
The lentil soup looks super yummy. Ill have to try that soon.
I'm studying to be a holistic nutritionist, and am learning a lot about food combining. Fruit should always be eaten by itself, and well in advance of any other foods (never after). Nuts are the exception. Otherwise the fruit will act like a glue in your digestive system, and mke you feel bloated and yucky. ;)
I hope you enjoyed your first day at school!

Oh, and so cool that your mom is cooking up yummy things- all the better for your studying brain to get all this great fuel. Hey, I'm like you- a meal isn't complete for me without fresh veggies/fruits in some form- I too transform most of my meals into inadvertent salads! =)

Remenber that pictures talk also. Open your heart and come along!!!!!

How sweet of your mom (wow I'm jealous)! I bet that the cabbage curry tasted great too. OOhhh Earthly Lentil Stew is one of my favorite Vive recipes. Sometimes I like to make it just for the amazing aroma that fills the whole house.
