My vegan lunchbox

I haven't been making anything spectacular lately, but I though that I could show you all what sort of lunch I like to pack for school.

But, first of all, here's my lunchbox:

Isn't it cool? It has pictures of different hot peppers, as well as how hot they are in Scovilles. My mom found it in someone's recycling bin and took it home & washed it. I don't see why someone would throw out a perfectly good lunchbox like that...

And, on the inside, I've got a collection of produce stickers. I've allllmost covered the entire interior! :D

Anyways, I know that this was a few days ago, but here's what I had for lunch on Monday:

Carrot & bell pepper sticks and bean sprouts, a roti, a mandarin orange, lima bean sprouts with parsley & flax oil & lemon juice, and a stir fry on top of some greens. Mmm!

A close-up on those sprouts:
Anyways, I've got to go pack today's lunch now... See ya!

(Sorry for the horribly short post, but it's harder to find blogging time now. Also, I'm staying with my cousins this weekend so probably no posts then either. :( I'll see what I can do. )

You eat WAY better than I did at your age. I'm lovin' the produce stickers.

What an awesome lunch. I'm pretty sure that when I was in high school, I frequented the cafeteria for french fries. Shame on me! I sure hope that my kids are as health-conscious as you when they get older! Good job! What a great vegan example you are!

I love how creative you are with the bean sprouts - way to "think outside the box!" Makes me want to experiment with the beans in my pantry...

What a cute lunchbox! Lately, I've been craving a cute lunchbox or bento, even though that would be a bit silly, since I work from home most of the time!

I love the produce stickers! My daughter has a binder with all her fruit and veggie stickers on it! Great conversation starter - especially since she's vegan too!
