Vegan Mofo: Bribery with baking

As I may have mentioned before, I'm the co-president of my school's environmental club. While the ecological impact of animal agriculture isn't THE reason I'm vegan, it's sure something to think about! I remember reading something in a John Robbins book, and it went something like this:

Let's say you take 7-minute showers, and you shower every second day. Now, imagine how much water you could save by not showering for an entire year... This is how much water you could save by not eating just one pound of Californian beef.

Shocking, isn't it?

Anyways. Environmental Club. The year has only just started, so one of the most important items on the agenda is to keep membership UP and encourage people to stay interested and participate. We had 60 people sign up at Club Day this year (a record!), and so far most people have been coming to the meetings at lunch. Let's just say that the classroom gets quite cramped!

Of course, in my experience, people generally like cookies and yummy baked goods. So I've been mass-baking huge batches of cookies to pass around and the meetings. :D And they go over quite well!

So far, I've made chocolate chip cookies and double chocolate chip cookies. I'm considering bringing brownies for next time, but I don't know. I keep running out of chocolate chips, and those get expensive!

Any recommendations for something with wide appeal, easy enough to transport, can be made in fairly large quantities, and is just plain delicious?

Cupcakes!!! Everybody loves those. Of course, it depends on how many you'd have to make and whether or not you own a cupcake caddy (or way to easily transport them).

Or there's always peanut butter cookies (cheap to make, yummy) or Blondies.

I gotta say though, you can't go wrong with chocolate chip.

your cookies look great. I love the rosewater cookies from V*con. They are fantastic and easy to move around.

I always bring organic/vegan chocolate to meetings.....gets snatched up pretty quick.

Bianca- Oooh, cupcakes would be amazing, but since I bike to school most days that might be tough... I like the idea of peanut butter cookies or blondies, especially! Thanks!

Vegancowgirl- Thanks! Ooh, rosewater? Sounds fancy :P I'll have to check those out! Vegan chocolate sounds good too, definitely easy :P

these ginger cookies are good. a little crystallized ginger goes a long way w/ these. I typically cut the pieces of it up (sort of a pain).

Also this cookie recipe is good. if you increase the molasses up to 1 tbs, they are more like molassess cookies. so you could skip the chocolate chips. flatten them quite a bit before cooking. it makes a really small batch - 6 decent sized cookies.

you could make sugar cookies and roll them out thin. cheap to make, but very time consuming. bonus is that you can make cool shapes. a thin powdered sugar, vanilla, and soy milk glaze is a must w/ these to add sweetness.

i just thought of some things. scones. or biscuits with jam and earth balance. since it's at lunch biscuits could work. for that matter, slices of a good bread with olive oil would work. pitas with hummus.

Ah yes, ginger cookies would be awesome! I can't believe I didn't think of that, thanks so much :) Sugar cookies would be excellent too!

Ooh, those other ideas sound good too, although I'd have to bring a lottt (like enough for 30+ people). Definitely an option though
