Yummy, quick stir-fry last night. It isn't a real fancy recipe or anything, but here's what I did:
Saute 1 clove of garlic & 1 tsp chopped ginger in a bit of canola oil. Once kinda browned, stir in 1tbsp of your favorite curry paste (or to taste... I like it kinda hot). Add about 1/2 cup of cubed eggplant and stir-fry for about a minute. Stir in 1 chopped red bell pepper, 2 stalks of broccolini (each cut roughly into thirds), a bit of chopped kale, and a bit of cabbage. Cook until the vegetables are ALMOST tender-crisp, then add some frozen lima beans. Or not. I just wanted some protein in there. Let them thaw out and cook for another few minutes. If you're a cinnamon addict like I am, sprinkle with cinnamon before serving.
We then went swimming at my favorite pool, and that was real fun! We were there for 3 hours, which left me absolutely pooped. So, I made a quick smoothie when we got home:
It's like Paulina's, but I've modified the recipe.
Banana Power Smoothie
1 banana
1 cup of soymilk (or as much as you'd like, to achieve desired consistency)
1 tbsp blackstrap molasses
2 tsp almond butter
Dump in your blender, give it a good spin, and enjoy! The molasses wouldn't mix too well in mine- in got stuck to the blender. :(
Feel free to add protein powder to the smoothie or another smoothie powder (like Vega).
And, for lunch today I had a salad & a smoothie.
Doesn't that look lovely and fresh? I didn't bother mixing it up and left everything in layers, so you can't see the carrot.
1/4 cup cabbage, roughtly chopped
1/2 bell pepper, chopped
1 carrot, sliced
About 1 tbsp sunflower seeds
A good pinch of alfalfa sprouts (or any other sprout)
For the dressing, I used the Liquid Gold dressing from Becoming Vegan, as always. A nice, tangy vinaigrette would be great here too. Maybe some apple cider vinegar and flax oil?
You might have noticed the pair of chopsticks resting on the side of the bowl... I've been obsessed over using chopsticks lately! It's just so much fun. I'll try to eat only using those bad boys for everything, unless it's something like oatmeal.

I love stirfrys. You're sounds great! And another great salad too.
I love stirfrys too :) I am really lazy and they are really quick hehe.. I usually use ready made vegetarian oyster sauce.
I just got a new wok, and am ashamed to say I haven't stir-fried anything in it yet! Your food looks so colorful and delicious, I'm inspired to go ahead and do it, already! And that salad looks divine.

Stirfries = the ultimate lazy food. but they still taste great!
Vegetarian oyster sauce? Cool, I'll need to get my hands on some of that.
