Getting creative with my breakfasts, parts four & five & six: tofu scramble & blueberry pancakes& vegan omelette

MEGA POST!

(For those who haven't read some of my recent posts, I've been getting sick of my usual breakfast of cereal/oatmeal with berries. Armed with the internet and a shelf-ful of vegan cookbooks, I'm now trying to vary my morning meal as much as possible, with delicious results!)

When I first started looking that the Vegan's Hundred lists, I saw that tofu scramble was on there, and I realized that I hadn't ever made it before. Ack! What kind of a vegan hasn't ever had tofu scramble?!

So, the next morning, I quickly whipped some up, using silken tofu, curry power, cumin, turmeric, onion, garlic, nutritional yeast, and red pepper. Sorry, I didn't measure anything!


I had it with two pieces of Ezekiel toast and grilled eggplant & zucchini. I ended up scooping the scramble onto the toast and eating it like a very messy sandwich.

To be honest, I wasn't a huge fan. Next time, I might try it with a different kind of tofu, maybe, or different spices.

I also made Dreena Burton's Banana Bliss Pancakes from Vive le Vegan! However, instead of bananas, I used frozen blueberries. These were soooo good!

They were dang easy, too. I mixed the dry ingredients together the night before so there was very little to do in the morning. I can definitely see myself making a big batch of these for breakfast and freezing the extras!

Oh, before I move on: I made my Apple Crisp for breakfast again, but in the microwave this time. It turned out pretty well! Not as crispy as oven-baking would have made it, but still delicious and 10 times faster. This would be another excellent option for school mornings.


Finally, just this morning, I made the famous Vegan Omelette for One from FatFreeVegan. And WOW, did that ever turn out great! Even though my batter was a bit too thick, it still cooked through and flipped over.

For the filling, I just used chopped bell pepper and fresh baby spinach. Next time, I'll take the time to properly stir-fry some veggies and seitan. mmm!

I like the omelette way, way, way more than the scramble. I'd never eaten an omelette before (not even before I went vegan) but I love how it's basically just a pancake with whatever you want inside. I'm definitely making this again! How easy would it be to whip up the ingredients in the blender at night, then simply cook it up the next morning? (answer: very easy)

I've also got my eyes on this Indian Vegan Omelette, made with chickpea flour. Has anyone made that or something of that sort? It looks really good!

I've got some quasi-sad news, though. School starts again tomorrow, and my life is going to get awfully busy again. I'm going to do my VERY BEST to keep blogging, even if it is just taking pictures of my school lunches or whatever. Hopefully I'll do better than last year, when I didn't blog for weeks at a time. :)

awww too bad you don't like tofu scramble. I LOVE TOFU ESLACBRM. haha

I actually do whip up my omelette mixture at night and then make them in the morning! haha that is funny :)

i've never had or tried any faux-egg made with chickpea flour. that sounds interesting! I'll have to check it out sometime soon :)

tofufreak- Yeah, I really did want to like it :( Guess I'll just have to try again!

Hey Mel! Yeah, I think I'll just have to try more tofu scramble recipes, hopefully there will be one that suits me right :)

Yeah, I'm glad to be blogging again! I got stuck in a food rut and it sucked, but now all is good.
