Vegan MoFo: Squashy squash squash

It's definitely autumn here- late autmun, actually! The temperatures have dipped below freezing and most of the leaves have fallen :(

However, there's always the lovely seasonal fall foods- warm, comforting, and delicious. As I mentioned in the quiz yesterday, my favorite is... squash!

I lovvvvve winter squash (squashes?)- they're just so sweet and delicious!

I'm kinda busy tonight, but tomorrow I'll post a yummy squash recipe that also uses quinoa and carrots... It's really quite magically delicious. :D I'll get back to your comments too!

Oh, I love squash too! It's one of my favorite veggies. I can't believe it's already so cold there. We're still having temps in the mid-80s in Memphis.

squash makes me think of thanksgiving because that's when I'd have it growing up. sort of didn't make sense to me why I wouldn't get it more often. Probably because my mother uses this really good squash (hubbard) that is like chopping through wood. She would chop it, peel it and boil it. way too much work. I will have to ask her why she doesn't roast it to make her life easier.
